Bulgogi Ramen
Incredibly quick and easy, this dish is full of flavor and textures. It’s one of our go-to weekday dinners because it’s crave-worthy and it’s ready to go in just about 20-30 minutes.
Ingredients:
2 packets of ramen noodles (discard the seasoning)
1 head of broccoli florets, chopped
1 tbsp olive oil
1 onion, sliced
1lb shaved beef
2 cloves garlic, minced
1 1/2 cups bulgogi sauce (found in the Asian section)
3 eggs, scrambled
Green onions & sesame seeds, for garnish
2-4 servings | 20 minutes
Directions:
Boil a large pot of water and add the ramen noodles. Use tongs to quickly break up noodles. Be careful to not overcook them, they’ll only take a few minutes to cook. Once loosened, strain and toss with olive oil to prevent sticking.
In a steamer basket, steam fresh broccoli over simmering water for about 10 minutes or until fork tender.
While the broccoli steams, heat olive oil in a large, deep pan. Once hot, add onions and cook until soft. Add in the shaved beef and cook while tossing until no longer pink. Add in garlic and cook 1-2 minutes until fragrant.
Add in the steamed broccoli and the ramen noodles. Toss with the bulgogi sauce.
In a small pan, scramble eggs. Season with salt and pepper. Add to the bulgogi, lightly tossing.
Serve garnished with green onions & sesame seeds.
