Our Favorite Meal-Prep Lunches

One of the best life changes we’ve made is consistently making our weeks lunches on Sunday afternoon. It began when Dylan got tired of eating fried foods on his work lunch and going back to a heavy workload and wanted fresher/cleaner options. And after a while, I’ve learned it’s incredibly beneficial for myself have have a pre-made lunch here at the house during my busy workdays (no more 5 minute ramen or bowls of cereal for lunch!)

After so many meal-preps, we’ve landed on quite a few that we happily repeat. Most of these can be eaten both cold and heated which is nice for Dylan since he doesn’t always have access to a microwave at work. Hopefully these can entice you to get into the same habit!

  1. Chicken Salad Pitas

    We double this recipe and use a whole rotisserie chicken from the deli. Then he slices all of the pitas in half, stores them in baggies in the pantry. Each morning, he grabs a meal-prep container and a baggie of pitas to stuff later at lunch.

  2. Turkey Taco Salad Meal Prep

    Dylan looooves cilantro, so he usually chops up some cilantro into the lettuce mix.

  3. Pizza Roll Up Lunch Boxes

    These are surprisingly good and filling! We use these wraps because they are healthier.

  4. Thai Chicken Lettuce Wraps (MY FAVE)

    These are literally AMAZING. The flavor in this is unreal and the soft crunch of cashews is a game-changer. And then the pairing of the butter lettuce is *chefs kiss*.

  5. Mediterranean Lunch Box

    These are super light and refreshing. The bright olive flavor and the creamy hummus is perfect for a quick light lunch. And don’t be fooled by the portion size — it’s very filling.

  6. Crispy Sesame Tofu with Zucchini Noodles

    I don’t eat tofu very often but this one is one that I crave. The peanut sauce on the zucchini noodles is somethin’ special.
