Crockpot Chicken Tacos
Get ready to thank me for the biggest lifesaver of 2021 — or possibly your whole life because this chicken taco recipe is really that good, that easy, and that cheap. This is a weekly staple around here. You.. are.. welcome.
For the chicken:
2 lbs chicken breasts
1 packet taco seasoning (or 2 tbsp of homemade taco seasoning)
16 oz salsa (I prefer a chunky type for this)
1/3 cup chopped cilantro
2 limes
For the tacos:
Tortillas
Sour cream or Greek yogurt
Cotija cheese
Avocado
Pickled red onions
Mango salsa
Makes 4 Servings | Total Time: 6 hours
Combine the chicken breasts, taco seasoning, salsa, cilantro and juice of two lives to a crockpot. Mix well and be sure the chicken is fully covered, including the bottom.
Cook on high for 4 hours or on low for 6-7 hours.
Use tongs to move chicken to a large bowl and shred with two forks (or a hand mixer). Add about 1/2 cup of juices from the crockpot or as much as you’d like to moisten the chicken.
Serve on tortillas with all the extras.
