Lemon Poppyseed Scones

So.. have you seen these at Target? Because Lord knows I have and I desperately needed to stop buying (and eating) them in bulk.

And so in exchange, I made a copycat version lol. These mini scones are super soft and just the perfect amount of sweetness.

Ingredients

Instructions

  1. Preheat oven to 400 degrees.
  2. Line a baking sheet with parchment paper. Zest and juice the lemon.
  3. In a large mixing bowl, combine the flour, salt, 1/4 cup powdered sugar, baking powder, poppy seeds, and the lemon zest. Mix well.
  4. Stir in the heavy cream until a soft ball of dough forms. Turn dough onto a floured surface but don’t knead the dough.
  5. Divide the dough into 3 portions. Shape portion into a small disc, roughly 3 inches in diameter. Cut each disc into 6 triangles.
  6. Bake the scones on the prepared sheet for 15 minutes or until lightly golden brown.
To make the glaze —
  1. Combine the lemon juice and the remaining 1/2 cup powdered sugar until a smooth glaze forms. Use a fork to drizzle the glaze on top of the cooled scones.
