Instructions

  1. Preheat oven to 450 degrees. Line two baking sheets with parchment paper.
  2. If making cinnamon sugar bites — In a small bowl, combine sugar and cinnamon and set aside.
  3. On a lightly floured surface, cut dough into 4 equal strips. Roll each strip into a rope about a foot long and then cut into 1-inch pieces.
  4. Stir together 6 cups of water and the baking soda in a medium saucepan and bring to a boil. Drop a few dough pieces into the water and let cook about 30 seconds, or until puffy and dimpled. Remove with a slotted spoon and drain well.
  5. Place dough pieces onto the prepared baking sheet, about 1/2-inch apart. Brush with egg.
  6. If making classic bites — sprinkle with sea salt.
  7. Place bites in the oven and bake until golden brown, about 9-12 minutes.
  8. If making cinnamon sugar bites — Combine the sugar and cinnamon. Dip the warm bites into the melted butter, followed by the cinnamon sugar mixture.
