I still remember my moms sloppy joes back in the day. Usually ground beef with a hearty tomato sauce on buns with a side of mac n cheese. Although I love those, I’m really really happy to have a healthy and equally as tasty version. This one is packed with veggies that are sautéed and hearty, mixed with turkey and a homemade, robust sauce. And the best part is topping it with fresh sprouts on a buttered bun. Game-changing!

Ingredients
For the Joes
1 lb ground turkey
1 red bell pepper (finely chopped)
1 green bell pepper (finely chopped)
1/2 cup black beans
2 tsp Worcestershire sauce
1 cup tomato sauce
1/3 cup barbecue sauce
2 Tbsp brown sugar
2 Tbsp apple cider vinegar
2 tsp chili powder
1/2 tsp crushed red pepper
1/2 tsp onion powder
salt/pepper
Extras
Hamburger Buns (We love Dave's Killer Bread)
Broccoli sprouts (or clover, alfalfa etc)
Shredded Cheese
Directions
Place the ground turkey in a large pan and cook over medium-high heat.
When the turkey is nearly finished cooking, add in the chopped peppers and black beans.
Cook until the vegetables are soft and the turkey is brown.
While everything is cooking, mix the remaining ingredients together in a bowl to create the sauce (adding salt/pepper to desired taste).
Pour the sauce over the turkey and veggies.
Simmer over medium-low heat for about 10-20 minutes.
Serve on buns, topped with cheese and sprouts.
